In this way we can classify the\nbio or organic wine.<br>\nDue to the non-intervention of chemical agents, it tends to express in its flavour\nmore of its <em>terroir<\/em>, showing for\nexample the minerality, when they come from calcareous clay soils.<\/p>\n\n\n\n<p>The downside is that some Bio wines may disappoint for\na shorter \u201caftertaste\u201d, sometimes disguised with a flavouring yeast or excess\nwood (longer in barrel). It is always worth remembering that good producers do\nnot resort to these devices.<\/p>\n\n\n\n<p>In order to obtain a good specimen, a good <em>terroir<\/em> is essential, with good soil,\ninsolation and winds that allow the plant to have a smooth growth, providing\nless intervention of the producer in the soil, a fact that should not be\nconfused with less work for the producer, as non-use of herbicides, pesticides\nor chemical fertilizers means that they need to use other mechanisms to combat\nnatural pests by simply planting grass and flowers (which attract other insects\nthat help attack small enemies including chickens living between the\nplantation) and, of course, the constant and very close monitoring of their\nplantation.<\/p>\n\n\n\n<p>Sulphites?<\/p>\n\n\n\n<p>A natural preservative, sulphur is used by a\nsignificant portion of Bio producers at much lower levels than traditional\nproduction, but there are already several products with no sulphite \u201cadded\u201d\n(sulphite already exists in wine).<\/p>\n\n\n\n<p>A paradox of bio production is that to improve soil\nrespiration, the plow is more frequent and with the use of tractors, the amount\nof pollutants emitted is increased. Some producers have been circumventing this\nproblem with the use of horses, going back to their origins.<\/p>\n\n\n\n<p>So, let&#8217;s try it out? But before that, it&#8217;s worth a\ntip: when serving, organic wines should be better aerated, as they can give off\nnot-so-pleasant odours when they first open.<br>\nIn an upcoming article we will talk about the differences between Bio (organic),\nbiodynamic and natural wine.
